Our Philosophy

Slow by Slow started with a simple idea: coffee shouldn't be rushed. In a world that values speed over quality, we choose to slow down.

We are a multi-roaster shop, meaning we don't roast our own beans. Instead, we curate the finest coffees from the world's best roasters—places like Heart in Portland, Coava, and other international guests. This allows us to offer an ever-changing menu of unique flavors and profiles.

Every cup is brewed with precision and care, honoring the journey the bean has taken from farm to cup.

Multi-Roaster

Being a multi-roaster shop means we're not tied to a single flavor profile or roasting style. We get to explore the full spectrum of what specialty coffee has to offer.

Our rotating selection features coffees from roasters we admire—those who share our commitment to quality, sustainability, and transparency. You might find a bright, fruity Ethiopian one week and a rich, chocolatey Colombian the next.

This approach keeps things exciting for our regulars and introduces newcomers to the diversity of specialty coffee.
